Same day focaccia using instant yeast, using a recipe recently shared by @shebakesourdough. It's my very first time making focaccia using instant yeast.
Bread flour 400g
Instant yeast 3g
Water 320g
Olive oil 12g
Salt 8g
This focaccia is co-made with my youngest. He wanted to play, I mean, learn, and focaccia is the easiest.
1. Mix everything in a bowl
2. Half hour later, do 1 set of stretch and fold. Don't rip the dough like my little buddy
3. Half hour later, 1 set of coil fold
4. 40 mins later, 1 final set of coil fold then transfer to a greased dish
5. Proof until double in size (took 1.5 hours at 28C)
6. Drizzle some olive oil on the dough, dimple with fingers, sprinkle some Maldon smoked salt flakes. Do not squish and burst all the bubbles like my kid.
7. Bake at 230C for 20-25 mins.
The little boy is so proud. He thinks he can make panettone now, after 1 bake of focaccia 🤣
The texture is much lighter compared to sourdough focaccia. Kids can't taste the difference, and recipe is a keeper for emergency bake.
