Sourdough Baguette hack

Who struggles with baguettes? Can't get both open crumb AND ears? I suggest making burst baguettes, no scoring, no shaping, no baking stone needed. I only used a baguette tray.



Recipe:

300g bread flour

240g water

70g levain

6g salt

Sprinkles of seeds (I used black and white sesame and sunflower seeds and soaked)


4 hours bulk at 28C with a few folds then cold retard without shaping.



Next day, flour dough and surface generously, flip out the dough, pull into a rectangle and let it rest 15mins (room temp 28C). Cut out 3 rectangles and fold the rectangles into half, keeping the length, now shaped like a baguette. Proof seam side down on a thick linen cloth for 30mins as oven preheats to 250C. Then, transfer baguettes to tray, seam side up, and bake for 20mins at 230C, first 10mins with steam. I used lava rocks.






Would you call these cheat baguettes? They're easy to make, light and crispy, and takes minimal effort.
