Use up your egg whites saved from making Panettone. Make Financiers!

Thinking of ways to use up egg whites leftover from panettone. Here are some financiers! Made some square ones with lots of dark chocolate too, but those didn't have a chance for a photoshoot. After I snapped these, those already vanished. The only evidence of their existence was chocolate stained fingers.



Guess I'll have to make them again 😂 Here is the recipe. If you have any good ones, please share with me.


230g egg whites

240g unsalted butter (browned)

105g almond flour

100g cake flour

170g sugar (reduced to 100g for mild sweetness)

1/3tsp baking soda (optional)

1/3tsp salt

Vanilla seeds (optional)


1. Brown unsalted butter and set aside to cool

2. Whisk egg whites with sugar, no bubbles needed but if you want your financier fluffier, you may whip it until slight bubbles are formed

3. Sift in all dry ingredients, stirring gently with a balloon whisk

4. Add brown butter (at 40-50C) and continue stirring until batter is smooth and shiny

5. Chill for at least an hour / overnight then bake. I baked at 200C for 5 mins then 180C for the next 10mins until it turns to the brown I want.
